a little quiche.


one of my goals this summer is to
get in the kitchen and master some new recipes.
last night i made a little tomato and goat cheese quiche with a side salad
it was a lovely little summer meal.

here is how i made it:

:: pre-made dough from the store
roll out the dough and fit into a buttered 9 inch pie pan. refrigerate while you prepare the filling.  set the rack in the lowest position in the oven and preheat to 400 degrees.
:: 1 pound of plum tomatoes (about 5 or 6) - cored, quartered, and seeded.  and set aside.
:: 4 ounces of goat cheese, 3/4 cup of half and half or heavy cream and 1/2 cup of milk - slowly mash cheese, cream and milk with the back of a wooden spoon until smooth.
:: add and whisk - 3 eggs, 1 tablespoon chopped fresh parsley, 1 1/2 teaspoon chopped fresh basil, 1/4 teaspoon salt and plenty of ground black pepper.
:: remove the pastry shell from the refrigerator and arrange the tomato quarters in the shell like the spokes of a wheel - filling the shell.  Pour the cheese mixture over the tomatoes and bake the pastry until golden brown - 40 to 45 minutes.
