texas tortilla soup.

this is probably my all time favorite soup/stew that jeffrey makes in the fall/winter months.  it is simply delicious and makes many servings, so we have leftovers all week!

in case you want to make some at your home too....

you will need ::
2 - 4 tablespoons of butter
1/2 cup of oil, divided
1 large onion, chopped
1 fresh jalapeno, seeded and chopped
4 garlic cloves, minced
2 large carrots, diced
6 ribs of celery, diced
1 lb. raw chicken meat, diced
1 tsp. each of ground cumin, chili powder, salt and lemon pepper
3 tsp. hot red pepper sauce
1/2 cup of flour
1 (14 oz.) can tomatoes
4 (10.5 oz.) cans of chicken broth

served with ::
corn tortilla chips
1 cup of sour cream
4 avocados, seeded and diced
1 cup of grated cheddar cheese

instructions ::
heat butter and 1/4 cup of oil in large kettle over medium-high heat
add onion, jalapeno, garlic, carrots, celery and chicken
simmer 5 minutes
stir in cumin, chili powder, salt, lemon pepper, pepper sauce and flour
add tomatoes and chicken broth
stir well and simmer 1 hour.

to serve ::
put soup in a bowl and top with sour cream, chips, avocado and cheese.  makes 6 - 8 servings.
YUMMY!

p.s. - have yall ever seen the adorable movie tortilla soup??  it is about a single dad raising his three daughters.  it is such a delightful little movie.
